There are dishes that always work, and chicken wings in honey and soy are exactly that. Cheap, easy to prepare, and the taste is such that the plate empties faster than you can sit down. The secret is not some exotic ingredient, but one simple combination and the patience to let them crisp up.

You'll need: one kilogram of chicken wings, salt, black pepper, olive oil and toasted sesame. For the sauce - 30 grams of honey, 60 millilitres of soy sauce and the juice of one lime. That's all. No long list, no ingredients left forgotten in the kitchen cupboard until next year.

The method is simple. Put the wings in a baking tray, season them with salt and pepper and drizzle them generously with olive oil. Bake them at 180 degrees for about 35 minutes. While they bake, mix the honey, soy sauce and lime juice in a bowl until they combine nicely into a glossy, thick sauce.

Once the wings are baked, brush them with the sauce, sprinkle toasted sesame on top and return them to the oven for another five minutes at the same temperature. Those last five minutes are key - that's when the sauce caramelises and gets that sticky, glossy crust. Serve them drizzled with the juices from the tray. They're perfect for summer, for company, or for an evening when you don't feel like cooking anything complicated but still want something worth it.
