The omelette sandwich - or, as it circulates online, the "omelette sandwich" - is exactly that: two things everyone has at home, joined in a way that makes the bread juicy inside and crispy outside. Both secrets are in one move and in the order.

You need little: two eggs, two slices of bread (brioche or good white bread is best), a little oil or butter, salt, pepper and a filling of your choice - cheese, ham, vegetables, whatever you like. First, beat two eggs with a pinch of salt and pepper, as for a French omelette. Heat a wide pan over medium heat with a little oil and pour in the eggs.

Now comes the key moment. Before the eggs set completely, you place the two slices of bread directly onto the liquid mixture, so it soaks in from both sides. Once the egg firms up a little, you flip the whole thing - bread and egg together - with a spatula. That is the dramatic part that looks striking in the videos, but is actually the simplest if the pan is wide enough.

Finally, you fold the overlapping edges of the egg inward, add the filling, close the sandwich and toast it on both sides until it turns golden. The bread absorbs the moisture from the egg, and contact with the hot pan gives it its crunch. The result: a warm meal ready in a few minutes, with little washing-up and no skill required. Perfect for a summer afternoon when you don't feel like cooking - but still want something more than a plain slice of bread.
